1 cup Woodbridge by Robert Mondavi® Cabernet Sauvignon
¼ cup unsalted butter, at room temperature
1 ripe banana, mashed
2 large eggs, lightly beaten
½ cup water
1-½ cups dark chocolate, chopped
1 cup granulated sugar
¾ cup high quality unsweetened cocoa powder
2/3 cup all-purpose flour
1 teaspoon baking powder
Directions
Soak cherries in Cabernet Sauvignon at least 3 hours, making sure cherries are completely submerged in liquid.
Preheat oven to 350°F. Line 9-inch square baking pan with parchment paper; coat with nonstick cooking spray.
Mash butter with banana in large mixing bowl. Add eggs, one at a time. Whisk in water until mixture is smooth. In separate large bowl, combine dark chocolate, sugar, cocoa powder, flour and baking powder. Slowly add dry ingredients to butter-banana mixture, stirring to incorporate after each addition. Mix until batter is smooth and there are no lumps. Gently fold in cherries, reserving a few for garnish; stir batter to incorporate.
Pour batter into pan. Bake 40 minutes or until toothpick inserted in center comes out clean. Garnish with reserved cherries.
