Ground Turkey Crispy Tacos

Ingredients

  • 2lbs of cooked ground turkey
  • 4 tablespoons olive oil
  • 1 teaspoon greek seasoning
  • 1 teaspoon harissa
  • 1 teaspoon garlic powder
  • 1 teaspoon onion salt
  • Salt and Pepper to taste
  • Corn tortillas
  • MEDITERRANEAN SALAD
  • 2 roma tomatoes, diced ¼” inch
  • 1 english cucumber, diced ¼” inch
  • 4 ounces of feta cheese, diced ¼” inch
  • ½ red onion, sliced or diced
  • 2 teaspoons of Greek Seasoning or Greek oregano
  • ½ cup olive oil
  • ¼ cup of red wine vinegar
  • 1 teaspoon dijon mustard (optional)
  • Salt & Pepper to taste

Directions

  1. Place a skillet over low to medium heat and 2 tablespoons of olive oil.
  2. Place your ground turkey into a hot skillet. Add greek seasoning, harissa, garlic powder, and onion salt, directly to the ground turkey in our skillet. Cook until ground turkey is fully cooked and seasonings are fully combined. For about 10 to 15 minutes.
  3. In a medium size bowl add diced tomatoes, cucumbers, red onions and feta.
  4. In a small bowl, add greek seasoning, olive oil, red wine vinegar, dijon mustard, salt and pepper. Whisk together until dressing is fully combined. Pour dressing over salad and toss until all vegetables are fully coated.
  5. In a hot skillet add 2 tablespoons of oil, place corn tortilla in the center of the pan and add shredded mozzarella cheese, ground turkey and fry for 2 to 4 min.
  6. Fold tortilla over and fry for about one minute on each side, until crispy or golden brown. Remove taco and place on serving plate or baking sheet and keep warm. Repeat above steps with remaining tortillas.
  7. When ready to serve, allow your guest to add the amount of Mediterranean salad onto their tacos. The Mediterranean salad acts like a pico de gallo.
  8. Serve warm and enjoy.
