Ingredients

  • 2 tbsp olive oil
  • 1 package (4 links) Butterball® Polish Style Hearty Turkey Sausage Links, sliced into ¼ inch coins
  • 4 cups of sweet potatoes, peeled and diced to ½ inch cubes
  • 1 cup sweet onion chopped into 1 inch chunks
  • 1 cup sweet red pepper diced to ½ inch (approximately two peppers)
  • 2 cups of chopped kale
  • 1 cup Brussels sprouts quartered lengthwise
  • 1 tbsp freshly minced garlic
  • Salt and pepper to taste
  • Optional - serve with crushed red chili pepper to spice it up at the finish.

Directions

  1. Heat large (12”) skillet to medium-high.
  2. Add sausage in a single layer with oil and brown. Turn and brown the other side allowing the sausage to get crisp and caramelized. Remove sausage and set aside.
  3. Add garlic and onion to skillet and cook for about a minute until they begin to soften and brown on the edges.
  4. Add the Brussels sprouts, red pepper, sweet potatoes and kale. Put lid on skillet, lower heat to medium and cook for about 7 minutes, stirring occasionally.
  5. When vegetables are cooked to a crisp doneness, add sausage back in to re-warm, approximately 2 more minutes. Season with salt and pepper to taste.
  6. Pair with a salad and crusty bread
