Ingredients

  • THAI GROUND TURKEY:
  • 1 tsp avocado oil
  • 1 lb Butterball All Natural* Ground Turkey
  • 2 cloves garlic, minced 
  • 1 tsp fresh ginger
  • 1 ½ Tbsp soy sauce 
  • ½ tsp curry powder
  • 1 green onion, sliced
  • PEANUT SAUCE:
  • ½ cup peanut butter
  • 3 Tbsp coconut milk (or water)
  • 2 Tbsp soy sauce
  • 1½ Tbsp honey
  • 1 Tbsp lime juice
  • FOR SERVING:
  • Butter lettuce leaves
  • Sliced carrots
  • Optional: cilantro, crushed peanuts, squeeze of additional lime

Directions

  1. Heat oil in a skillet, add ground turkey, and cook until browned (5–7 minutes).
  2. Stir in garlic, ginger, soy sauce, curry powder, and green onion; cook 1–2 more minutes.
  3. Whisk together all peanut sauce ingredients until smooth.
  4. Spoon turkey into lettuce leaves, top with veggies, and drizzle with peanut sauce.
