Emily Hayden's Egg Roll in a Bowl

Ingredients

  • 1 medium onion
  • 1 lb of Butterball ground turkey
  • 1 tablespoon minced garlic
  • 1 teaspoon grated ginger
  • 1 tablespoon rice wine vinegar
  • ¼ cup soy sauce
  • 1 tablespoon hoisin sauce
  • 1 tablespoon hot sauce or sriracha
  • 1 bag of coleslaw or 1/2 cabbage, chopped
  • ½ cup diced carrots
  • salt and pepper to taste
  • cashews for topping
  • 1/4 cup mayo
  • 1-2 tablespoons hot sauce

Directions

  1. Heat oil in a skillet over medium-high heat. Cook diced onion until translucent. Add Butterball ground turkey, cook until no longer pink, draining excess liquid if needed. 
  2. Stir in garlic and ginger for 30 seconds. Mix in rice wine vinegar, soy sauce, hoisin sauce, sriracha sauce, coleslaw mix, and carrots. 
  3. Season with salt and pepper, cook for 5-7 minutes until cabbage wilts. 
  4. Adjust seasoning, if necessary, then sprinkle with cashews and top with spicy mayo (combine mayo and hot sauce).
