Ingredients

  • 8 slices BUTTERBALL® Turkey Bacon and/or BUTTERBALL® Breakfast Sausage links
  • ½ ripe avocado
  • 4 large eggs
  • 1 teaspoon milk
  • ¼ cup (1 ounce) shredded cheddar cheese
  • Salt and black pepper
  • 1 teaspoon butter
  • ½ diced red bell pepper

Directions

  1. Cook bacon according to package directions. When cool, chop half of the bacon; set aside. Chop avocado; set aside.
  2. Whisk together eggs, milk and cheddar, in small bowl. Season with salt and black pepper.
  3. Heat butter in large nonstick skillet, until just melted. Add bell pepper; cook 2 minutes or until crisp-tender. Add egg mixture; cook over medium-low heat, stirring consistently, until eggs are set. Remove from heat; stir in chopped bacon and avocado. Serve immediately with remaining slices of bacon and/or a few pieces of sausage.
